Paripu vada is a favorite south Indian snack loved by all. It’s crispy and spicy flavor makes it a great combination with idlis and also as a snack for tea.
The best part of it is that it can be made in a jiffy. Only that you will have to soak the dal for 3 to 4 hours earlier.
For a family of two, half a cup of dal will suffice. It makes approximately 12 small vadas.
1/2 cup channa dal (kadala Paripu)
1/2 tsp Fennel seeds
2 dry red chillies
4 or 5 shallots
Soak the dal for 3 to 4 hours. Drain it and transfer to the mixer. Add the fennel seeds, chillies and salt. Beat the mixer on turbo. Do not make a fine paste of it else it will not turn out crispy.
Grind it coarsely and collect it in a bowl. Add in the chopped shallots and chopped curry leaves and mix well. Check for salt.
Take a spoon of this mixture and form a ball. Press it between both palms and deep fry in hot oil.
Crispy vadas ready!
