Tomato Rice is an easy variety rice recipe which you can make when you run out of vegetables or practically anything, other than tomatoes of course!

It’s tangy and spicy flavor will go with any side dish like chicken or mutton gravies and even fish fries. You can also have it with just raita  (curd) and paapad.

For 2 persons,

Ingredients are –

1 cup basmati rice (or jeera rice)

2 cups water

Oil

A piece of cinnamon, cloves and cardommom

1 onion chopped(or half a big onion)

2 tomatoes chopped

1tsp ginger garlic paste

1/2 tsp chilli powder

1/4 to turmeric powder

Salt

Directions –

1. Wash and soak the basmati rice for half an hour.

wp-image-649116096jpg.jpeg2. In a vessel, heat 2 tbsp oil and add whole spices. Add in the onions and ginger garlic paste and sauté for a minute.

wp-image-1096000267jpg.jpeg4. Add in 2 cups of water and 3/4 tsp of salt. When the water comes to a boil, add in the drained rice and stir.

5. Close the lid and keep the flame in simmer.

Tips

* For 1 cup of rice, 2 large and ripe tomatoes are mandatory.

* You can also make this in a pressure cooker. As soon as the first whistle goes off, switch off the flame.
