Mutton or goat meat is one of my favorite non vegetarian menu items as goat meat helps to burn fat, control weight and has loads of lean protein. It’s a healthier alternative to chicken.

Mutton works best for Biryani. Smaller chunks are good for making gravies and side dishes for roti or chapatis.

This recipe is a thick mutton roast recipe which can be enjoyed with rotis and even any variety rice. You can alter the consistency as you like.

1/2 kg mutton pieces

2 big onions sliced

6 small onions (chopped or crushed )

1 tbsp ginger garlic paste

Curry leaves

1/2 tsp chilli powder

1/2 tsp  turmeric powder

1 tbsp garam masala powder

1 tsp fennel powder (perunjeerakam)

Directions  –

1. In a pressure cooker, heat 4 tbsp oil and add in the sliced onions, small onions and curry leaves.

2. Add in ginger garlic laste and curry leaves. Sauté them till onions turn light golden color.

3. Add in the chilli powder, turmeric powder, garam masala and fennel powder.

4. Add in the cleaned mutton pieces and Sauté them with the masala for 5 minutes.

5. Pour 1/2 cup  water just to cover the mutton. Close the pressure cooker and cook for 5 to 6 whistles.

6. Once the steam goes off all by itself, open the cooker and check if the mutton is well cooked.

7. Transfer the contents to a non stick pan and Sauté at high flame to evaporate excess water.

8. When you get desired thickness , add some curry leaves and switch off flame.

Mutton Roast is ready to be served.
