Garlic shrimp is a delicious appetizer and tastes great on pasta or toast. Once you try this recipe,  I’m sure you will be left wanting for more. This is a very simple recipe but make sure you follow the sequence and the timings because they can make a huge difference.

For this recipe, it is important to keep your ingredients ready ahead of time so that while cooking, you can easily grab them.

The secret ingredient for this recipe is the brine. I’m using the brine solution of black olives (or caper’s brine)

Ingredients –

Prawns/shrimps with/without tail and deviened – 25ogms (10 -15)

2tbsp olive oil

Garlic Cloves – 7/8 fat cloves chopped finely

1 lemon – extract juice

Red chilli flakes – 1 tsp

Butter(cold)-  3-4 small 1 inch blocks

Brine of olives(or any canned food)- 2-3 tbsp

Parsley/coriander leaves finely chopped





1. In a frying pan,  heat olive oil. When you see the first wisp of smoke, add in the shrimps and salt.

2. Sauté the shrimps on both sides for 1 minute till light pinkish.

3. Add in the chopped garlic and red chilli flakes and stir and toss them for another minute on medium flame. Do not let the garlic brown.

4. Add in the lemon juice, brine, 1 inch butter piece and half the coriander leaves.

5. Saute for another 2 minutes.When the butter is melted, add in some more butter (2 inches piece) and the remaining coriander/parsley leaves.

Garlic shrimp is ready. Serve garlic shrimp on rice/pasta/toast topped with the white sauce.


*If your sauce is too thick, add a little water and boil. Use this to drizzle on the shrimps.

*Do not overcook the shrimp. Total cooking time shouldn’t exceed 7-8 minutes.
