Stir fry vegetable dishes also called poriyal in Tamilnadu is a well known side dish mainly made along with fish curry. This recipe can be used for a variety of vegetables like lady’s finger, carrot and beans, cabbage and even spinach.
Ingredients

1. A bowl of chopped vegetable(cabbage, carrot and beans or lady’s finger )

2. 3tbsp oil

3. 1/2 onion chopped

4. 1/2 tsp mustard seeds

5.1 Red chilli (optional )

6. Curry leaves

7. Salt

For blending,

1. 3tbsp grated coconut

2. 1/2 tsp cumin seeds

3. 2 cloves garlic

4. 1/2 tsp chilli powder

5. 1/4 tsp turmeric powder

Directions –

1. Heat oil in a pan and crackle mustard seeds. Add in the red chilli, chopped onions and curry leaves. Sauté.

2. Add in the vegetables. Here I’m using chopped carrot and beans.

3. Add salt and stir fry for 5 minutes on medium flame until cooked. Close the lid in between for faster cooking.

4. In a blender add in the grated coconut, cumin seeds, garlic, chilli and turmeric powders. Do not add water.

5. Once the vegetables are almost cooked, add this blended mixture and mix well. Sauté for 2 minutes on medium flame.

6. Tasty stir fry vegetable is ready.

Serve it with rice and gravy.

You can do the same with spinach, cabbage, beet root or lady’s fingers.


Tips

1. While cooking the vegetables, you can add a little water and close the lid for faster cooking,  especially cabbage. This prevents it from sticking to the bottom. Later keep on high flame to evaporate excess water.

2. Do not add water to lady’s fingers. Also add salt and the blended mixture to it only when the stickiness is gone.
