Chutneys are a must have for the staple south Indian breakfast of dosas and idlis. Their spicy and tangy flavor goes well with all dishes. Even for aapams and rice, a touch of chutney will spice it up. There are many chutney recipes and varieties. But when it comes to the traditional recipes, the common chutneys made in India are-

* White Coconut Chutney

* Red Coconut Chutney

* Tomato Chutney

* Green Chutney

These chutneys are basic and you will not have to go through a hundred recipes searching for the one. Once you master these chutneys, you can add your own flavor and taste to them.

White Coconut Chutney

For 2 persons, Ingredients

  • 1/2 cup grated coconut
  • 1 green chilli(deseeded if you want less spice)
  • 2 small onions (shallots)
  • 1 inch tamarind piece or 1tbsp lemon juice
  • 1/4 tsp salt
  • 1/4 cup water

Grind all the ingredients and then add water and blend again to your required consistency.

You can also temper it with a seasoning of oil, mustard seeds, red chilli and curry leaves.

Red Coconut Chutney

It is similar to the above chutney except that you need to replace the green chilli with a red chilli. Blend and temper as mentioned above.

Tomato Chutney 

This is one of my favourite chutneys. They are tangy and I love them with dosas.

For 2 persons,

Ingredients –

  • 1/2 onion
  • 3 shallots
  • 2 ripe tomatoes
  • 2 garlic cloves
  • 1 dry  red chilli
  • 1/2 inch tamarind

Directions –

1. In a pan, sauté all the above ingredients together till onions are transparent and tomatoes turn mushy.

2. Cool and grind into a paste without adding much water.

3. Temper with a seasoning of oil, 1/2 tsp mustard seeds, 1/4 tsp urad dal and curry leaves.

Green Chutney

Green chutneys are made as a spread for sandwiches,  rolls and even chaat. It goes well with idlis and dosas too. It’s quite simple to make and healthy too!

Ingredients –

  • 1 cup coriander leaves
  • 1/2 cup mint leaves
  • 1 green chilli
  • 1/2 tsp cumin seeds
  • 1/2 inch ginger piece
  • 2 garlic cloves
  • 1 tsp lemon juice
  • Salt

Grind all the ingredients together to form a smooth paste.
