Vegetable Kurma is a basic Indian recipe made as a side dish for chapatis/parathas. It is basically a curry made of vegetables with yogurt and coconut. It goes well with aapams for breakfast. It is easy to make and is healthy as well. This is a basic south Indian style veg kurma. For a quick dinner you can easily put it together without much hassle. 

For 2 persons,

Ingredients –

  • 2 tbsp oil
  • 1 tsp cumin seeds
  • 1 onion chopped
  • 1 tbsp ginger garlic paste
  • 1/2 tomato chopped
  • 2 green chillies slit
  • 1 large potato cubed
  • 1 carrot cubed
  • 4 french beans
  • 1 cup Cauliflower florets
  • 1/2 cup green peas
  • 1/2 tsp turmeric powder
  • 1/2 tsp chilli powder
  • 1 tsp fennel powder
  • 1 tsp garam masala
  • 1 cup coconut milk or 1/2 cup coconut paste
  • Coriander leaves chopped


    1. In a blender, blend the coconut with water to make a paste. You can also use coconut milk powder in water.

    2. In a cooker(or pan), heat oil and sizzle cinnamon and cumin seeds. Add in the chopped onions, green chilli and ginger garlic paste and sauté. 

    3. Add in the chopped tomatoes and sauté till they turn mushy.

    4. Add in chilli powder, turmeric powder, fennel powder and garam masala. Saute for a minute on low flame.

    5. Add in the cashew coconut paste and the diced vegetables. Add salt and 1 cup water. Close the cooker and allow for 1 whistle on low flame.

    6. Garnish with some chopped coriander leaves.

    Serve hot with roti or rice.
