Vegetarian Pulao is a common Indian dish which is loved by all. It is quite simple to make in 20 minutes. On a lazy day when I’m not in the mood to make lunch, this is my go to recipe. Easy and happy in tummy.

I have used Basmati rice here. But I occasionally also use Jeera rice. Both have the same measurements.

For 2 persons,

Ingredients are –

1 cup Basmati rice

2 cups water

Cinnamon,cloves and cardommon

Oil or ghee –  1 tbsp

1/2 Onion chopped

Ginger garlic paste – 1 tbsp

Green Chilli – 1

Carrot, potato, green peas, capsicum(or any vegetables you wish).

Procedure

Wash and Soak the Basmati rice for half an hour. If using jeera rice, soak for 10 minutes.

Keep a kadai on flame, add 1 tbsp oil or0 ghee. Add the spices and half of 1 chopped onion. Add the ginger garlic paste, slit green chilly and sauté for 1 minute.

Add in the chopped vegetables are stir fry them for 2 minutes. Add salt and keep the lid closed for 3 minutes for the vegetables to half cook.

I like to add 1 tsp of garam masala for that extra flavor.

Now, add in the soaked and drained rice to the vessel and stir it. Close the lid and Keep flame high for 30 seconds. Then reduce flame to simmer.

The rice will take approximately 10 minutes to cook. Do not keep more than that else it will burn. Open the lid after 10 minutes and give it a stir. Veg Pulao is ready.

Have it with some paapads and raita.
